Baileys Cream

Ingredients

  • 560ml double cream
  • 60g sugar
  • 8 egg yolks
  • 25ml brandy or Baileys
  • 1 shot of strong espresso coffee

Method

  • Mix the yolks, sugar and brandy/Baileys with the coffee
  • Bring the cream to the boil
  • Whisk the yolk mix over a bain marie until it thickens to the ribbon stage
  • Add cream in stages to the yolk mix, reboiling as you add it
  • Pour into glasses and pop into the fridge
