Chocolate Mousse

Ingredients

  • 340g dark chocolate
  • 160ml milk
  • 60g egg yolk
  • 240g egg whites
  • 60g caster sugar 

 

Method

  • Melt chocolate in a bowl over simmering water
  • Bring milk to boil and stir into the chocolate and whisk
  • Add yolk and mix in thoroughly
  • Allow to cool
  • Whisk whites to stiff peak adding sugar 10g at a time
  • Mix 1/3 into chocolate mix and whisk briefly
  • Fold remainder of egg white in carefully to avoid breaking down aeration
  • Put into individual cups/glasses and chill for 1 hour
