Dairy Free and Gluten Free Cake

Ingredients

  • 150ml rape seed oil
  • 50g cocoa powder 
  • 120ml boiling water
  • 2 tsp vanilla extract
  • 150g ground almonds
  • 1/2 tsp bicarbonate of soda
  • pinch of salt
  • 2 oz sugar
  • 3 eggs

 

Method

  • Put the cocoa powder into a cup, pour on boiling water to make into a paste
  • Put sugar, oil and eggs into a bowl and whisk for 3 mins
  • Put in cocoa paste and beat as you go
  • Add in vanilla extract, soda and salt
  • Once all mixed together, pour into an 8inch cake tin
  • Bake for 40-45 mins on gas mark 3, 170 for a moist chocolate cake
