Festive Cranberry Ring

 

Festive Cranberry Ring

 I was given this recipe by a friend who is an experienced and excellent cook. This is makes a wonderful Christmas treat and so simple too.

 

1x500g packet puff pastry

Filling

110g/4oz ready made marzipan- well chilled

175g/6oz frozen or fresh cranberries

Topping

 50g/2oz glacé cherries, halved

50g/2oz glacé pineapple, chopped

50g/2oz angelica, chopped

25g/1oz chopped mixed peel

apricot glaze

egg to glaze

 

METHOD:

 

1.Pre-heat oven to Gas 6/200c.  Grate the marzipan into a bowl and add the cranberries.

 

2.Roll out the pastry to a rectangle approximately 46cm x 20cm / 18 inches x 8 inches.

 

3.Spoon the cranberry mixture down the centre of the pastry, roll up from the longest side, dampen the edges to seal.  Form a ring with the seam underneath, seal the edges well.

 

4.Carefully slide the ring onto a baking tray lined with baking parchment, brush with beaten egg to glaze and bake for about 20 minutes  or until golden.

 

5.Remove from the oven and brush with warmed apricot glaze.  Top with the cherries, pineapple, angelica and mixed peel.  Serve warm or cold with whipped cream.
