Lavendar Shortbread Biscuits

Ingredients

  • 125g icing sugar
  • 125g butter
  • A couple heads of lavendar, washed
  • 250g plain flour
  • 2 eggs
  • 100ml double cream

 

Method

  • Rub together the icing sugar, butter and flour and add in the lavendar
  • Whisk the eggs and mix in with the cream and add to the flour mix
  • Work into a dough
  • Cover with cling film and refrigerate 
  • When cold roll out on a lightly floured surface
  • Cut out biscuits into whatever shape you like 
  • Bake at 160 for 10-12 mins
  • Allow to cool - they will crisp up when cold.
