Mincemeat Cake

A Jane Hollingsworth recipe

 

Ingredients

  • 3 ounces margerine
  • 1 ounce lard
  • 4 ounces brown sugar
  • 2 large eggs
  • 12 ounces mincemeat
  •  7 ounce self raising white flour
  • A splash of milk

 

Method

  • Cream the fat and sugar together, then beat in the eggs 
  • Stir in mincemeat and fold in the flour
  • Pop in oven on gas mark 3/160 for 10 minutes, then reduce to gas mark 2/150 for another hour and a half to bake until the top is fir, and the cake is shrinking back from the tin
