Nottingham Pudding

Ingredients

  • 6 Bramley apples
  • 1/4 tsp ginger
  • 1/4 tsp mixed spice
  • 75g butter
  • 75g sugar
  • 90g plain flour
  • 3 eggs, well beaten
  • Splash of cold water
  • Pinch of salt

 

Method

 

  • Cream the butter and sugar together and add in the ginger and spice mix
  • Peel and core apples and then fill with the butter mix
  • Make a batter with the flour, eggs and water and make sure the consistency is as thick as double cream
  • Place the apples in a buttered oven proof dish and pour over the batter mix
  • Bake for 50 minutes on 190 or 170 fan oven
