Chicken Satay

Ingredients

  • 500g Strips of chicken

Marinade

  • 100ml of oil
  • 1/2 onion (diced)
  • 1 tbsp soy sauce
  • 1 1/2 tbsp coconut milk
  • 1 1/2 cloves of garlic (crushed)
  • Chopped coriander

Sauce

  • 100g peanut butter
  • 100ml coconut milk
  • 2 tbsp pineapple juice
  • 1 1/2 tbsp chilli sauce
  • 1/2 tspn salt

 

Method

  • Mix all marinate together with the chicken and leave for 2 hours
  • Put marinated chicken onto skewers ready to cook
  • Mix all the sauce ingredients together and bring to the boil and pop into a little dish as a side dipping sauce for the skewers
