Lincolnshire Potato Cheesecake

Ingredients

  • 250g potatoes (2 large)
  • 125g  butter
  • 125g caster sugar
  • 2 eggs
  • zest and juice of 1 lemon

 

Method

  • Line a flan dish with shortcrust  or sweet pastry - your choice!
  • Mix all the filling together and fill the flan to the top
  • Pop in the oven on 175 degrees for 25 mins until the filling is set and lightly golden brown
