Pumpkin and Sage Soup

Ingredients

 

  • 750g pumpkin (peeled seeded and disced)
  • 2 carrots (chopped)
  • 2 onions (chopped)
  • 30ml/tablespoon of oil
  • 1 large potato (sliced)
  • 200ml chicken or vegetable stock
  • creme fraiche
  • a sprinkle of salt and pepper
  • 12 sage leave (chopped finely)

 

 

Method

 

  • Roast the pumpkin, carrots and onion in the oil at 220 degrees celsius gas mark 7 until soft and caramelised
  • Add stock and simmer for 20 mins
  • Add potato and simmer until the potato is soft
  • Season and blend 
  • Mix the sage with the creme fraiche and add a spoonful to each bowl when serving
