Spicy Pork Cutlets & Fruity Salsa

A Phil Matthews recipe

 

Ingredients

  • 400g lean pork mince
  • 25g spring onion
  • 1 garlic clove
  • 15g chopped ginger
  • 1 tbsp chopped corriander 
  • Half a chilli with seeds in for spice (take out if you don't want spice)
  • A pinch of salt and pepper
  • 1 egg

 

Salsa 

  • 1 ripe mango
  • 1 apple
  • 1 tomato
  • 25 g ginger in syrup
  • Half a bunch of chopped chives
  • Lime juice
  • Olive oil

 

Method

 

  • Mix all the burger ingredients together and form into cutlet shapes.
  • Rest for an hour to let the flavour soak into the meat
  • Shallow fry until golden brown. Make you you check it's cooked all the way through!
  • For the salsa, simply dice the ingredients and mix together.
  • Serve with the cutlets
