Winter Warmer Soup

Ingredients

 

  • 500g of vegetables of your choice, Phil recommends carrots, onion, celery, leeks and potato
  • Vegetable stock cubes
  • 250g of Precooked pulses (can be from a packet or use leftover rice instead

 

Method

  • Dice up vegetables
  • Make 1 1/2 litres of stock with stock cubes
  • Pop precooked pulses in the microwave for however long it says on the packet
  • Add veg to the stock and simmer for 20 minutes
  • Add pulses and stir
  • Season and serve with crusty bread
