Apple & Fig Relish

Apple & Fig Relish

This relish compliment duck, pork and smoked meats.

 

 

 

2 cooking apples

50g red onion

75g dried figs

50ml white wine vinegar

1 tsp English mustard

Pinch Cayenne

1 clove of garlic

100g sultanas

30g sugar

1. Dice the cooking apples and red onion

2. Combine all the ingredients, place in a heavy based pan and bring to boil

3. Lower heat and allow to simmer gently for an hour (check to prevent sticking/burning) or until it has a jam like consistency

4. Check flavour and adjust as necessary

5. Cool and liquidize
