Tomato and Avocado Salad



8 medium fine ripened tomatoes

2 avocado

Red onion

1 tbs olive oil

Balsamic/white wine vinegar

Lemon juice



1. Chop up the red onion and slice the avocado.


2. Dice up and combine with the rest of the ingredients.


3. Drizzle the oil and vinegar on top and add the salt and pepper.


4. Squeeze the lemon onto the ingredients.


5. Leave to stand for flavours to soak in.


6. Serve on a bed of crisp lettuce.


(Tip: Slice the onion and marinate in vinegar over night if not keen on a raw onion taste)
