Winter Kale & Lentil Soup

This is a warm and filling high fibre dish perfect for these cold winter days. Serves 4

150g/5 oz Puy Lentils 
2x 200g packs kale
1.5 litres vegetable stock
195g can sweetcorn, drained
4 sprigs thyme
400g can chopped tomatoes


1.     Cook the lentils in boiling water for 15 minutes, drain and return to the pan.  Add the kale, stock and remaining ingredients.

2.    Cover and simmer for 8 minutes, season to taste before serving.

* For a quicker soup try using canned lentils.
