Apple & Raisin Squares

These are great for a picnic as they are easy to pack and transport, good for packed lunches too. Makes 12-14 squares

225g/8oz self-raising flour
225g/8oz rolled oats
1 tsp baking powder
225g/8oz butter
225g/8oz sugar
2 tbsp golden syrup
2 dessert apples, peeled, cored and finely chopped
100g/4oz raisins


1. Grease and line a 23cm/9inch square tin.  Preheat oven to Gas 4/180C.

2. Mix the flour, oats and bicarbonate of soda in a bowl.

3. In a saucepan melt the butter, sugar and golden syrup over a low heat then add to the flour mixture.  Mix well then press half the mixture in the base of the tin.  Mix the apple with the raisins and sprinkle over the base of the mixture in the tin.

4. Spread over the remaining oat mixture on top, gently press down. Bake for 30 minutes, leave to cool for 5 minutes before cutting into squares.  Allow to cool completely before storing in an airtight tin
