Banana and Coconut Tart

Ingredients

  • 250 ml cream
  • 3 eggs
  • 75g sugar
  • 100g desiccated coconut
  • 25g melted butter
  • 2 bananas
  • Sweet pastry

 

Method

  •  Line an 8 inch flan dish with sweet pastry and blind bake
  • Boil the cream and coconut together and leave to cool
  • Mix in the egg, sugar and the rest of the ingredients
  • Mash the bananas and place on the tart base
  • Cover with the coconut mix and bake on 125 degrees until set 

 

 

Tip: If you've got lots of bananas left over, bit bruised on the skins and squishy then pop them in the freezer to use at a later date
