Baked Supreme Cod with a Herb Crust

Ingredients

  • 4 x 150g pieces of cod
  • 80g breadcrumbs
  • 60g butter
  • 40g grated parmesan
  • 25g chopped parsley
  • lemon juice

Method

  • Brush cod with a little lemon juice
  • Place breadcrumbs, cheese and herbs in a processor with butter to bind ingredients. Season to taste
  • Roll out between sheets of plastic and place in the fridge to firm up
  • Cut out squares to place over the fish
  • Place topped fish on buttered baking sheet and place in oven for approximately 10 minutes or until the fish is cooked
