Beef and Stilton Pasties

Beef and Stilton Pasties
(pre-heat oven to 190®C) makes 4 medium sized pasties

For the pastry: 
350g plain flour
175g shortening/lard
½ tsp salt
5-6 tbsp. cold water


  1. Sieve the salt and flour together, rub in the cold shortening to achieve breadcrumb texture
  2. Add cold water and combine to a smooth paste
  3. For extra flavour add some herbs or perhaps some cracked black pepper
  4. You can cheat of course and buy some in most supermarkets have a ready supply in stock.

For the filling:
175g minced beef
1tsp tomato paste
1 small onion chopped
1 carrot peeled and diced small
1 lg potato peeled and diced
25g flour
Salt and pepper to taste
1 clove garlic crushed (optional)
120g stilton cheese


  1. Cook the beef mince in a little oil for 5 minutes, add the tomato paste and all the vegetables and continue to cook for another 5 minutes
  2. Add the flour and cook out 1 minute
  3. Add the stock and cook for a further 10 minutes. The mix should not be too wet
  4. Leave to cool
  5. Roll out the pastry to 12cm squares approx., spoon some mix into one half of the pastry, divide the cheese between each pasty, egg wash edge to seal, and fold over.
  6. Place on a baking sheet lined with greaseproof paper and bake for about 35 minutes until golden brown

Serve with a crisp green salad lightly dressed with olive oil and wine vinegar
