Cajun Blackened Fish

For 6 portions


  • 2 tbsp of salt
  • 2 tbsp of sweet paprika
  • 2 tbsp of onion powder
  • 2 tbsp of garlic powder
  • 2 tsp of cayenne pepper
  • 2 tsp of dried oregano
  • 2 tsp of dried thyme
  • 6 fish fillets/cat fish/basa/haddock
  • 750g of butter
  • 8 tbsp of blackened fish seasonings


  • Combine salt, powders and seasoning ingredients in a bowl
  • Heat a large pan over a high heat for 10 minutes
  • In a separate pot heat up the butter until it melts
  • Dip a piece of fish into the melted butter and sprinkle seasonings onto both sides
  • Place fish into the hot pan
  • Pour a tsp of melted butter on the fish in the skillet
  • Cook for 2 minutes then turn over
  • Place another tsp of melted butter onto this side of the fish
  • Cook for 2 minutes
  • Repeat process for each fillet
  • Before serving add another tsp of melted butter on each fillet
