Chicken Satay
Ingredients
- 500g Strips of chicken
Marinade
- 100ml of oil
- 1/2 onion (diced)
- 1 tbsp soy sauce
- 1 1/2 tbsp coconut milk
- 1 1/2 cloves of garlic (crushed)
- Chopped coriander
Sauce
- 100g peanut butter
- 100ml coconut milk
- 2 tbsp pineapple juice
- 1 1/2 tbsp chilli sauce
- 1/2 tspn salt
Method
- Mix all marinate together with the chicken and leave for 2 hours
- Put marinated chicken onto skewers ready to cook
- Mix all the sauce ingredients together and bring to the boil and pop into a little dish as a side dipping sauce for the skewers
