This is rather like a Bolognaise sauce for pasta but using British Pork instead of beef.
450g/1lb lean minced British Pork
3 rashers lean dry cure British bacon, chopped
2 cloves garlic, chopped
1 onion, peeled and chopped
1 carrot, peeled and finely chopped
1 cougette, sliced
1 x 400g can chopped tomatoes
2 tbsp tomato purée
8 sun dried tomatoes, chopped
Parmesan cheese to serve
1.Place the mince, bacon, garlic and onion in a non-stick pan and cook until the juices run out
2.Increase the heat and cook until the meat is browned.
3. Add the carrot and courgette and cook for 1-2 minutes. Add the canned tomatoes, purée and sun dried tomatoes bring to the boil simmer for approximately 25 minutes.
4.Serve with boiled spaghetti and sprinkle with parmesan.
